A Mug-Cake worth fighting for...

Blueberry/Apple Cinnamon  Protein Mug-Cake (A.K.A. Healthy-Sin-in-a-cup)!

So this morning I was up early and did not want the usual: turkey bacon, egg whites, and grapefruit. I have been meaning to try the ever popular mug-cake but had yet to get on it.

With what I had in the pantry and fridge, I made something I will be using both as a breakfast and healthy sweet fix! It really is THAT good! 

We were out of oatmeal, but as luck would have it, there was a small container of apple cinnamon oatmeal pancake mix. I highly recommend finding something similar as a healthy alternative to pure oats or any other base you use. 

Ingredients: (Serves 2) -  I estimated both servings were at 225 calories (as a meal due to how large this is)


1/2 Cup oats 
1/4 Cup Hazelnuts 
1 scoop protein powder (any flavor will work with fruit mug-cakes)
2 Tbsp Splenda or sweetener alternative 
2 egg whites (this fluffs the mix when cooking)
As many blueberries as you want!
A dash of milk to make it slightly creamier (its dry until then)


Directions: Fill the mug with this mix 3/4 of the way. Set the timer for 2:45 on your microwave and watch it go. Do not freak out (as I may or may not have done this AM) thinking the mix will just continue to rise 3 inches over the rim while cooking. It will deflate a little when you take it out of the microwave. 

Drizzle with organic local honey, splenda, or anything else you can think of! Viola!

Egg Whites - low in fat, carbs, and calories...these bad boys are a great source of healthy and clean protein.

I hope you enjoy the recipe as much as we did! Next time for a dessert, I will try adding some dark chocolate chips...mmmmm...
