Coconut Curry Chicken...healthy-style!

Prep Time: 10 Minutes
Cook Time: 20 Minutes

Ingredients:

4 Chicken Breasts
1/2 Sweet Onion
2 Cloves of Garlic
1 Tbsp Coconut Oil
1 Can Light Coconut Milk
2 Tbsp Mild Curry Powder
1/2 Cup Unsweetened Coconut Chips
1 Large Bag of Frozen Broccoli
(Salt and Pepper to taste)


Step 1: Mix sliced onion and garlic cloves in with the coconut oil, then saute' until onions become see-through.



Step 2: Mix coconut chips, coconut milk, and curry powder together and let it simmer in a separate pan/pot





Step 3: Dice chicken breasts into small cubes and mix into pan with onions and garlic until fully cooked.


Step 4: Pour your curry mixture into the pan with chicken and let it simmer together for 10 minutes, continuously stirring. 



Step 5: Add in the frozen broccoli and once it is fully cooked, let it sit in the curry for a few minutes before serving...


Step 6: Try very hard not to eat it right of the pan and serve it in a pretty bowl :)
